Recipe all Makes 12 muffins. ------------------------------------------------------------------------------------------ Pumpkin Nut Muffins Recipe Ingredients 1/2 cups wheat flour 1/2 cups steel cut oat 1/4 cups white flour 1/4 cups milled flaxseed 1/2 teaspoon of salt 1/2 cup brown sugar 1/2 teaspoon baking soda 2 teaspoon baking powder 1 cup pumpkin purée 1/4 cup extra virgin olive oil 2 eggs, beaten 1 Tbsp. Amber Nectar (or Honey) Optional 1/4 cup milk 1/2 teaspoon nutmeg 1/2 teaspoon cinnamon 1 cup chopped nuts (walnuts or pecans) Method 1 Preheat oven to 350°F. In a medium sized bowl, sift together the flour, oat, flaxseed, salt, sugar, baking soda, baking powder, and chopped nuts. 2 Mix the pumpkin, olive oilM, eggs, 1/4 cup of milk, and spices together, then combine with the dry ingredients, until just incorporated. Do not over-mix. 3 Spoon mixture into a prepared muffin tin. Bake for 25-30 minutes. Check for doneness with a toothpick inserted into the center of a muffin. If it comes out clean, it's done. Cool on a rack. ---------------------------------------------------------------------------------------------------------- Whole Wheat Flax'N Apple Muffins Recipe Ingredients 3/4 cups wheat flour 1/4 cups steel cut oat 1/2 cups white flour 1/4 cups milled flaxseed 1/2 teaspoon of salt 1/3 cup brown sugar 1/2 teaspoon baking soda 2 teaspoon baking powder 1/2 cup chopped nuts (walnuts or pecans) 2 cup finely chopped apples 3 Tbsp. extra virgin olive oil 1 eggs, beaten 1/2 cup apple juice Method 1 Preheat oven to 400°F. In a medium sized bowl, combine all dry ingredients. 2 Mix olive oil, eggs, and juice together, then combine with the dry ingredients, until just incorporated. Do not over-mix. 3 Spoon mixture into a prepared muffin tin. Bake for 18-20 minutes. Check for doneness with a toothpick inserted into the center of a muffin. If it comes out clean, it's done. Cool on a rack. -------------------------------------------------------------------------------------------------- Chocolate Coffee nuts Muffins Recipe Ingredients 1/2 cups steel cut oat 1-1/2 cups white flour 1/4 cup instant coffee powder 1 teaspoon of salt 1/2 cup brown sugar 1 teaspoon cinnamon 1 Tbsp baking powder 1/2 cup chopped nuts 1/2 cup semisweet Chocolate chips 1 teaspoon Vanilla Extract 1/2 cup melted butter 2 eggs, beaten 1/2 cup coffee 1/2 cup milk Method 1 Preheat oven to 400°F. In a medium sized bowl, combine all dry ingredients. 2 Mix milk, coffee, eggs, sugar, and melted butter together + vanilla extract , then combine with the dry ingredients, until just incorporated. Do not over-mix. 3 Spoon mixture into a prepared muffin tin. Bake for 20-22 minutes. Check for doneness with a toothpick inserted into the center of a muffin. If it comes out clean, it's done. Cool on a rack.
